The server seems to stop processing mail, when I say processing, delivering both internal as well as external mail, in and outbound.
This is the system:
Exch2000 SP3 on Win2000 SP4
All the services are going, even once the server stops processing messages, there are no Event Log entries either.
There are no messages in any of the queues, even after enumerating them, however you can find the messages in the message tracker.
Any thoughts???

Sounds as though your messages are vanishing into the categorizer.
Why is the difficult part. You'll need to turn up some of the diagnostic logging on the server to get a hint as to what's going on.

Locate the server in the admin console.
Right click / properties / diagnostics logging
The ones to look at will probably be under MSExchange transport or MsExchangeIS/System

Application log.
Are all messages failing to deliver?

Cool.
Once the server stops processing the mail, there is no message flow.
Clients are still able to connect, they are still able to compse and send, and they go back to the server, but seem to go nowhere.
Post reboot, these messages are then delivered.
It is not message specific either, it is for both internally sent and externally sent mail.
BTW, thanks for the help.
