I reckon firefox is the go, but safari also shits all over IE.

I use Safari for my day to day browsing and have found very few problems with it.
On the off chance I find I page that won't view properly in Safari I will use either Camino or FireFox. I do use FireFox when web developing because it has a bloody handy feature where you can select a block of text and view the source code for just the selected area. This means no more searching through code for the little bit that you want.
I only ever use IE when I have to update calls using our call logging system at work.

In my book firefox & Safari are just about even, but I like the way that firefox looks better, im not much of a fan of the brushed metal look for safari, or all the other apps that use it.

Actually I'm the opposite. I love brushed metal. It has that whole Delorian/time machine feel to it. :)
Aqua just feels boring to me. It feels like a jazzed up version of a Windows window. Brushed metal has that whole "all-in-one" feel to it that makes it seem that every aspect of the program are one. Aqua feels a little disjointed and Frankensteinish where the title bar and the toolbar and status bar and work area all feel seperate from each other.
Maybe I'm looking too much into it but I wish there was an option to have every program use Brushed Metal for those like me or Aqua for those such as yourself. That would make OS X personal and efficient for each user.
