I say, post your good recipee's in here.
------------------------------------------------------------------------
Ingredients:
1 tub of Leggo's tomato paste (140 gm)
1 can of Lagina Diced roma tomato's
1 bay leave
1 onion chopped/grated
1 clove of garlic
1 teaspoon of sugar
1 teaspoon of basil (Use the tubed stuff from coles! It comes in toothpaste style containers, and lasts around 3 months)
1 teaspoon of oregano (Again, tubed stuff from coles is quick and easy)
And a pinch of salt
*optional*: Red cooking wine [40ml of it] (or a slosh or 2 of it ) - I get mine from the grog shop in a small bladder style thingo...
Pasta - Your prefered style really, I like spirals with this pasta as the sauce sticks to it
Method:
1. Heat a little bit of oil in the bottom of the pan and fry the onion and garlic till it's soft and the onion is golden brown. (Be carefull not to burn it, or the end product tastes like utter shit, no matter how much tomato or herbs you put in there... you can taste burnt onions all though the pasta)
2. Add the tomatos, tomato paste, salt, basil, bay leave, oregano and teh sugar. Stir it all around. [This is also the time to add the Wine aswell if you wish to add it]
3. Now the easy bit. Let it simmer for as long as you want. I've noticed, the longer you leave it, the better it tastes.. but half an hour is okay if you're in a rush... I let mine tonight simmer for 1 and a half hours, and it was the best one ever...
4. Cook your pasta. Follow directions on packet
5. Serve on top of your desired pasta, toss lightly (shut up!... this is food here you know ), and serve with a wine that goes well with italian food (Being 17, parents still fussy bout letting me drink @ home... but I found that a red wine is typically nice with it... but I wouldnt drink it with wine if you've already added the cooking wine to the sauce... can be overkill)
That's it ... It's taken me 1 and a half years to work out the ultimate recipee. Many people have helped me beta test it, and it's ready for release into public. A little bit of history to accompany it *cue dream music*
I was looking for a good recipee for italian pasta, found around 5... mixed and matched from 4, using 1 as my base... have been tinkering around with it alot, and have finally got the perfect recipee (In my, and 5 other peoples opinion).
This keeps well for the next day aswell ie) Breakfast/Lunch/Dinner
