Ingredients

1 kg Beef Mince
1 cup rice
1 large can tomato soup
salt and pepper

Method
Mix together unccoked rice and beef mince with plenty of pepper and some salt. Roll into balls (ping pong ball to golf ball size) and place in pot. Empty can of tomato soup can over them and the a can full of water. The balls should be covered. Simmer for about an hour. Do not stir, as the porcupines will fall apart, but make sure you don't turn it up enough to burn. Sooup will reduce to a delicious sauce

Consider adding garlic and onions into the mixture (but not the porcupines as they'll fall apart)

Serve atop mashed potato

We cook a variation of this regularly, with 1/2 to 1 onion and an egg in the balls. The egg helps hold em together with the onion in. We boil the soup before adding the balls. Also longer grain rice (basmati or jasmine) add to porc effect.

so did i, but i realised i make something similar only i never had a name for it :D now when my daughter asks what we're having, i can tell her we're having porcupines :D

This recipe commemorates the first time my sister and I defied my mother.
Back in the day my mum thought this would be "creative and fun". She'd buddied up with a neighbour and received a "new" recipe that we were sure to love....
It sucked so bad I still remember wanting to vomit in my mouth.
My sister and I were told we couldn't leave the table until we had finished.

My rather tired and angry mum sent us to bed anyway at 10pm.

(They were fun to roll at each other though :D)

I had to dig around in another cooking thread to find this when I saw it once.

I'd just like to say this is a great and easy little recipe to whip up! It's hugely yummy, and it freezes and re-heats well in the microwave.
It's really filling too.

We usually have about four or five of them each all by themselves. Yum-o! :)

This has become my favourite recipe! (for dinner-type food)

Sorry, I can't remember who it was, but damned if I'm going to start digging around for information at this time of night.
