Ok fatties, listen up. There are shitloads of ten minute curry recipes, so here's my recipe for a cheap, easy 9 minute curry. The spices should be available easily enough and once they're in your cupboard they'll last for ages - so it might cost you a few bucks to get the spices in to make your first curry, but from there on in you're pretty much only paying for whatever meat you use.
Stuff you need:
3 tbsp Olive Oil
400g prawns or chicken fillets (skinned and chopped)
1 Onion, peeled and sliced.
2 cloves of garlic crushed or sliced really fucking small.
1 or 2 chopped fresh chillies. If you dont like your shit hot then take the seeds out too. Fag.
1/2 teaspoon of salt
1/2 teaspoon of turmeric
1/2 teaspoon of cumin seeds or ground cumin
1/2 teaspoon of coriander (ground is fine but if you're using fresh the stalks have the best flavour, not the leaves!)
1 teaspoon of tomato puree
1/2 teaspoon of garam masala*
2 teaspoons of double cream (optional)
*For people unfamiliar with Indian food, Garam Masala is essentially a spice mix. There are shitloads of different recipes you'll be able to find on the net, or you can buy a premixed one at a supermarket with the rest of the spices. I use a premixed one at the moment but I'll knock up a batch of my own once it runs out. You could substitute the half teaspoon of garam masala with a full teaspoon of curry paste if you were so inclined.
What you need to do with the stuff:
Heat your oil in a frying pan or wok and add your onion and prawns/chicken once its hot. Continue to fry for a few minutes before stirring in your garlic and chilli, stir from time to time.
When your meat starts to cook (this wont be longer than a couple of minutes if you're using prawns or your chicken is sliced thinly) add trhe salt, turmeric, cumin and coriander - stir well and continue to fry.
Add the tomato puree and garam masala, then fold in the cream (if you're using any).
This little beauty should serve about 2 or 3 people if you're serving it with rice and/or breads.
Extra stuff!
The next time I do it I'm tempted to swap the double cream for a quarter can of coconut cream/coconut milk. The coconut tempers the chillies and makes it a bit easier on n00b tongues, and the contrast in taste is good too.
Dont be afraid to experiment and throw in some mushrooms, capsicum, spinach, whatever. You can even replace the prawns/chicken with vegetables if you're a complete weirdo.
