For Xmas dinner with the family I cooked a Turducken. For those who don't know it's a Turkey stuffed with a Duck stuffed with a chicken.
To make this wonderous beast you first get all three birds and bone them ( leaving the wings/legs on the turkey ). You then skin the chicken and duck.
I also made a spicy pork stuffing for it.
Lay the Turkey out flat skin side down( the boning process means it opens up flat ) put a layer of stuffing on top, lay the duck on top of the turkey and cover with layer of stuffing, put the chicken on top with another layer of stuffing.
Fold the turkey up and use kitchen string and/or skewers to force it back into the rough shape of a turkey. cover the wings in alfoil as well as both bum and neck cavities ( helps stop stuffing fall out ). Put breast side up into a large pan and cover with foil.
Cook for around 8 hours at 120 degress C. Uncover it for the 2 hours or so. Once cooked let rest for at least 30 minutes.
That's a cut down version of the recipe, I used several different types of seasonings and stuffed butter in between the skin and meat of the turkey and used the bones extra bits to make a gravy etc.
Unfortunately the butcher who i bought them from also boned them for me to save prep time. He managed to mangle the chicken and duck both into 3 or 4 pieces and didn't tell me. So it didn't turn out as well as it could have. Still, it tasted fantastic! :)

i admire your deterimination to build this bad boy from scratch but you can order these pre-made online nowadays and have them shipped.

Pre-made and shipped in Australia ??? I doubt it.
Even so, I don't think I would ... making it was half the fun ... if it was premade I don't think I would have gotten the same sense of satisfaction. :)

yeah, that's true. but when you have one pre-made all you have to do is cook it so you have more time for beer.

well, every time (http://www.kleph.com/mardigras/index.htm) i have cooked a turducken, i have also been frying turkeys, boiling crawfish and cooking gumbo. so i think i got that multi-task thing down pretty good.

and turducken originated in south louisiana. which is predominantly catholic. which is why we have mardi gras and astonishingly lax liquor laws. so if that means we gotta have the pope too... well, i'm down with that.

Look Kleph, if you were serious about getting organised, you'd just jam that whole fucker straight up your arse and save yourself the trouble of chewing it. This would also leave your mouth free for beer drinking activities.

Stuffed Camel
1 whole camel, medium size
1 whole lamb, large size
20 whole chickens, medium size
60 eggs
12 kilos rice
2 kilos pine nuts
2 kilos almonds
1 kilo pistachio nuts
110 gallons water
5 pounds black pepper
Salt to taste
Skin, trim and clean camel (once you get over the hump), lamb and chicken. Boil until tender. Cook rice until fluffy. Fry nuts until brown and mix with rice. Hard boil eggs and peel. Stuff cooked chickens with hard boiled eggs and rice. Stuff the cooked lamb with stuffed chickens. Add more rice. Stuff the camel with the stuffed lamb and add rest of rice. Broil over large charcoal pit until brown. Spread any remaining rice on large tray and place camel on top of rice. Decorate with boiled eggs and nuts. Serves friendly crowd of 80-100.

great work.
i watched something on tv where they made an 11 bird roast for christmas, starting with a woodcock as the smallest then worked their way up. they also went out and shot most of the game, apart from the massive turkey they finished with.

Legitimate Russian Doll roast recipe (stolen from my copy of Schott's Food & Drink Miscellany);
This would take some time and money to prepare, and it would be wise to debone all the birds larger than the Ortolan. The question remains of how long to cook this monstrosity once it's prepared; Eighteen hours of moderate roasting seems reasonable, but it would be prudent to check that all the juices run clear, given that it's poultry.
