I got a crock-pot (slow cooker) for my cooking needs. One great reason is I can huck in all the stuff, turn on the cooker, and go to work.... by the time I come home..... there's my dinner.

I got one great recipe for a nice soup/stew that rocked me sideways. I just altered a creole shrimp recipe. and it turned out sooooo nice:

1 1/2 cups diced celery
1 1/4 c. chopped onion
1 c. chopped bell pepper
1 (8 oz.) can tomato sauce
1 (28 oz.) can whole tomatoes, broken up
1 clove garlic, minced
1 tsp. salt
1/4 tsp. pepper
1/2 lb. shrimp, deveined & shelled
1/2 lb. scallops.
1/2 lb. Random fish (I went with Cod, snapper would be nice)
Cayanne Pepper. pinch or two (to each their own too)
Herbs: whatever is handy. (I did thyme, sage, and tarragon.)

PREPARATION:
Combine all ingredients except seafood. Cook 3 to 4 hours on high or 6 to 8 hours on low. Add seafood in the last 2 hours of cooking and blast to high.

I thought it would turn out nasty..... but it was REALLY good. I had leftover and gave them to co-worker. He honestly said it was the best soup he's ever had.
