Tonight I have a rabbit and pumpkin risotto planned. For no other reason than I have both rabbit and pumpkin that need to be used up. Making rabbit stock right now... heheh, small woodland creatures.

I believe it's considered a white meat. It can be used pretty much interchangeably with chicken, but has a slightly richer flavour.

chicken breast fillets in a steamer.. sprinkle herbs and seasoning on it..
i also decided i'm gonna make a white wine and herb sauce to go on top of the chicken, only it'll probably end up all over the vegies and the rice too just for a bit of extra flavor :D

Yay Muppet! :D I steam chicken all the time and it's always so juicy. I just put it in my stove-top vegie steamer, and then lavish lots of sauce on top.
Tonight Mum and I are having a Tuna & Potato Pie.

well, more of a paprika stew neways.
Dice an onion and soften in a little olive oil, add diced topside, and a diced capsicum (red bell pepper for the off-oz people here), a glug of malt vinegar, tablespoon of sugar, tablespoon of sweet paprika [or better, smoked ground paprika], a little chicken stock, 2 tablespoons of tomato paste and enuff water to make it a little runny ... cook for an hour until it thickens and the smell drives you nuts [not a long journey for most], then serve over penne or pasta spirals ... mmmm

crumbed fish (of which type I don't know, but it's hella tasty) mashed potato and boiled carrots.
Very good. mashed potato and carrots are the all time best thing to have with your fish.

on the mashed potato note:
Mashed Potato Soup. My daughter loves it.
Basically, 2 packets of black & gold instant mash, fried bacon pieces, chives, garlic salt.
Make the "potatoes" to directions, but add extra milk til you get the soupy consistency, then add bacon, chives and a little garlic salt.
I tried it with proper potato, but I was missing too many packet preservatives to make it taste the same :(
I've also added leek or asparagus to it, awesome yum.

Crumbed, Fried Chicken Breast (cut into pieces and done in GOOD olive oil) with Napolitana/Bolognese mix sauce and fries (that were in fact baked)...

Rather than say whats for dinner tonight, I'll list out what I'm planning for my menu this week. It will also serve useful to me if i need to refer back to this post :D
- Creamy beef stroganoff, with sauteed mushroom, slivered onions and crunchy brocolli on a tangle of savory noodles.
- Tender Indian butter chicken stew with capsicum and baby peas served together with fragrant jasmine rice.
- Stir fry sweet chilli chicken, tossed with an assortment of soy spiced vegetables like capcisum, carrots and brocolli, nested on garlic noodles
- Delicous mango curry dory fish fillets with caramelised carrots and taste soaking rice side servings
- Chilli con carne mince, mixed with whole peeled tomatos, beans, onions, basil, oregano and completed with al dente pasta shapes.
Would anyone like to come for dinner ? :clap:

Booooya! I'm building a house at the moment and it should be ready by my wedding in december... the kitchen is MASSIVE with over 15m of pure bench space, plus 2 x 900mm oven/cooktops (Widescreen format for that extra long pizza) and a whole host of other wonders...
I've been there before where you have to somehow cook up a storm with 1m of bench space if you're lucky and still find the storage area while you cook other bits and pieces.
Needless to say, the first meal will be Mrs Macs Meat Pies... ;)

That way its controlling my portion sizes and I'm getting a healthy amount of meat & veges.
They also tend to be a bit more Digestive Safe for me at the moment.
If I do feel like cooking I've got brown rice I can cook, and 3 halves of chicken breasts in the freezer

I would suggest that you eat some raw veges as well because nuking/cooking times on those microwave meals are so long that all the goodness in these goes out the door...

We're having a BBQ for tea tonight since we one the rump raffle at the pub last night! $5 for about $60 worth of rump aint too shabby!
I'm also making my famous mushroom sauce. I didn't even LIKE mushrooms and started experimenting with them one day and came up with this delish sauce. The secret ingredient is two capfuls of BUNDY RUM!
Guess it's not a secret anymore... Meh. :shrug:

Chicken breast, veggies and noodles. Decided to try out Masterfoods Chicken Thai Stir Fry Recipe Base as the sauce, which I now know never to buy again, it was bland and watery.
The chicken was lovely though.

Last night we had Honey Chilli Chicken with a side of asian greens (stir fried Bok Choy, Broccollini and a bit of oyster sauce) for main and homemade chocolate mud cake, whipped cream and strawberries (that had been soaked in some good brandy all day) for dessert.
My brother was so thrilled. :D

to celebrate my brand new le creuset crock pot I'll be doing a really nice beef stew (http://www.recipes.it/beef/beef13.htm). I've always browned meat before putting it in a stew, so this recipe goes against my usual cooking style, but it's always good to break the "cooking rules" that you've built up for yourself occasionally.
Dinner at the Mosman Hotel tonight so probably steak! :D

Tonight on the menu at Le Manda's is roast lamb seasoned with garlic and rosemary, baked carrot, zuchinni, potato (sweet & regular), pumpkin, onion, peas, corn, brocolli & cauliflower.
The worst part? I have to do the cooking AND the cleaning up afterwards. :( It better be worth it *shakes fist*...

I cooked a BBQ last night for a friend's birthday. I made :
- BBQ pork ribs with kleph's bbq rub and dragged through smoky bbq sauce just before cooking
- Steaks marinated overnight in dark beer, sugar, soy, and garlic
- chicken kebabs with a lemon, garlic, and rosemary marinate, marinated overnight so the acid in the lemon juice partially cooked the chicken.
- halloumi, chorizo, sundried tomatoes and kalamata olive kebabs
- a handful of supermarket sausages for any peasants.
went down really well :)

Tonight was pizza and pasta night!
Pasta was a no-brainer, spiral pasta with a jar of fetta and stuff stir thru sauce.
Pizza on the other hand ... I made a fresh wholegrain dough with smashed chickpeas through it, rolled it out really thin. I made a sauce by simmering a tin of tomatos, a glug of white wine, some random herbs, sundried tomatoes, roasted capsicum.
I topped it with shaved potato mixed with olive oil, garlic and rosemary around the edge, then mushrooms, then green capsicum in the middle, a sprinkling of very finely chopped onion and a very light sprinking of grated mozzerella.
Cooked it in the oven at Max. temp on a pizza stone for about 5 minutes.

For starters we had oyster mushrooms battered in egg (s+p) and breadcrumbs and then fried, dipped in sweet chilli sauce before gobbled :D
Then a lemon and herb marinated chicken breast fried and cut into a garden salad.... it was all yum!
went to my favourite malaysian restaurant, curry puffs, chicken curry and deep-fried mango icecream...now i creak when i walk :D
