I really like Moosaka, I want to make it, but since there is only one of me, then I don't know how well eggplant will freze. If I had my way then I woud be having moosaka instead of rock melon and pineapple, garnished with strawberries cut into fans.

Had my bro and his fiancee around for dinner saturday so I cooked up a feast.

First was Smoked Camenbert and Ash Brie crumbed and baked and served gooey as a fancy fondu.

I made a Guiness and beef stew for the main meal and skewered chipolatas with rosemary and put them on top of the stew and left it in the oven for a few hours.

I made a sauce out of red wine, sugar, cinnamon, and bay leaves and boiled it right down to a goo and then put the cooked chipolatas in the pan with it and cooked it right down until it was a sticky mess stuck to the chipolatas.

I also baked some asparagus wrapped in proscuitto with cherry tomatos and kalamata olives smushed up. I served this on top of the chipolatas for entree.

I then served the stew with fresh breadrolls and a little dish of fresh Rosemary, parsely, garlic and lemon zest smushed together with a morter and pestle which you sprinkle into the stew ( the italians have a name for it, but can't remember it ) as you serve it.

For dessert I made frozen chocolate and bourbon ( makers mark ) souffle with a chocolate and bourbon hot fudge sauce, fresh whipped cream and dusted liberally with vanilla bean infused sugar.

It went down fairly well :) I was gonna take photos of it all as it was so brilliant, but got too busy getting it all ready and forgot.

Okonomiyaki. Awesome way of using up whatever leftover stuff is kicking around the fridge. Plus the kids love them, they're good for you and take bugger all time to make. The perfect dinner.

Last week I bought some awesome green prawns at the market that were so freakin' fresh. I crumbed 'em in a breadcrumb-parmesan-parsley combination and baked them. My god. They were good. I was almost sorry I had guests over to share them.

Moral to the story is, the prawns were so good I decided to buy some crab and cook it the way I was shown in France. I'm making some bread to go with it. I'm excited :D

I have pretty much spent my long weekend so far, cooking and wining. Life is good.

Friday Lunch: Warm lamb salad, with cumin pitta
Friday Dinner: A rich veal ragu with pasta. I cut the pasta in big thick ribbons so it would soak up the sauce, just so.
Saturday Dinner: Chicken segments, browned and deglazed with vermouth, baked over a bed of chunky onion, capsicum, mushrooms, beans and garlic cloves in white wine.
Tonight: Osso bucco with preserved lemon.

I'm proud to say that these days, my experiemental cooking (in this case the lamb salad and the chicken) pretty much has a 100% hit rate. It so didn't ten years ago :)

Saturday night I was entertaining some friends we hadn't seen in ages, so I decided to do it properly:

1) greek mezedes with ouzo

mezedes :
deep fried camenbert
spinach and fetta parcels
meatballs with a jam sauce ( cheaty ikea lingonberry jam )
thick cut french stick toasted on griddle and rubbed with garlic
chorizo, halloumi and sundried tomato on skewers
olives and sundried tomatoes
hommus and tzatziki dips

2) main course:

pork ribs rubbed with kleph's bbq rub and my own homemade bbq sauce ( balsamic, rosemary, dill, garlic, soy, orange juice, paprika, fennel, coriander, ketchup ) and slow roasted for 4 hours

roast beef with incisions all around stuff with garlic and sundried tomatoes, generously coated in wholeseed mustard. Roast potatoes, pumpkin and carrots.

OK
So i started off making taco mince...
500g of mince...
added taco seasoning, some water, some garlic (i like garlic), some paprika, 2 beef stock cubes, and some chopped up tomato.
then decided it would be a good idea to try making meatballs which I have never made before.
so i added olive oil, bread crumbs, oregano, red wine, more garlic, 2 eggs (on the advice of zgeek irc denziens),
Since I was cooking brown rice at the time (cooked about 500g of it, and then portion it off and freeze it... and when i want brown rice, viola! nuke and ready), i decided to add a few handfuls of brown rice.

So....
lets hope these don't taste like shit

i'll be cooking them in organic extra virgin olive oil, with red wine, and maybe i'll chop up some peppers (or sprinkle some cayenne pepper over the top)

Haven't decided how i'm going to eat the meatballs.. probably just a few in some dipping sauce.

If all else fails I'll drown them in tobasco sauce and try to hide the shitty taste of them.

OK, I cooked them two ways.

Baking them made them stick together really well and they're a lovely colour too.

I had about 3, and the rice did exactly what I wanted it to - gave it an interesting 'wholegrain' type of flavour and made them INCREDIBLY filling.

I may make spaghetti tomorrow.

Chinese chicken and pork rolls with plum sauce and fried rice...
Pound a chicken breast really thin, spread it with crushed garlic, Chinese 5 spice and salt/pepper. Wrap it around a piece of ham, then dip in the roll in flour then egg wash. Fold/wrap the chook in spring roll wrapper then fry off. Slice diagonally and arrange on fried rice and drizzle with a soy/plum sauce combination.

Meatball update:
OK, I cooked them two ways.
so frying them sucked, they fell apart whenever I tried to turn them
Baking them made them stick together really well and they're a lovely colour too.

I had about 3, and the rice did exactly what I wanted it to - gave it an interesting 'wholegrain' type of flavour and made them INCREDIBLY filling.

I may make spaghetti tomorrow.

theres this great little disk called hedgehogs ( or porcupines ) which is basically meatballs with raw rice mixed through them in an oven proof pot with a tin of tomatoes and stock. As they cook the rice expands and sticks out of the meatballs like little spikes... is ruddy brilliant!

Yeah most everything is shut today... including all the bottle stores. We have a bottle of sake from Japan and a bottle of Baileys in the house, both unopened. We're drinking the sake first b/c man, I hate Baileys. ;)

As for dinner, we went to the store last night and got what we needed to make a creamy chicken curry with peas and carrots for tonight. Yum!

Last night I put my 1337 barbecue skills on display.

Made a marinade out of freshly ground cumin, coriander, black pepper, salt, garlic lemon juice & olive oil. Diced some pork and eggplant and let it roll around in the marinade for a few hours. Threaded the marinaded pork and eggplant cubes onto skewers and popped them on the grill.

Meanwhile, butterflied open a nice fresh turkish pide loaf and lightly toasted it on the barbecue, then spread a nice helping of hommus over the inside. Unskewered the meat and eggplant onto the bread, topped with leafy green stuff (spinach, rocket etc) and drizzled some dressing made out of yoghurt, lemon juice, garlic and olive oil over the top. Closed it over and sliced it up for eating purposes.

A friend of mine is starting a business making and distributing gourmet gluten free pasta.

I just had three types of filled pasta with a sweet potato sauce:
Kid + paprika
3 types of mushroom and garlic
onion, drambuie and sultanas

ALL OF THEM WERE AWESOME
the pasta was SLIGHTLY dryer than normal pasta, but we think that was because they weren't cooked enough... because the mushroom ones were fine
but i particularly liked the ones with goat meat in them

I made a bulk amount of vegetable meat and barley stew

Contained:
1 lamb shank (needs more, next time i'll get a soup bone and some chunks of steak like i use in the goulash)
vegetable and beef stock cubes
celery, carrot, various herbs, potato, barley.

its very hearty, but i need more flavour in it next time, its a bit bland... less barley next time if I use more meat.

These stews are awesome, i've been cooking in bulk, and freezing and then when I'm feeling lazy i grab one and heat.

Since I live in newtown and have gorged myself on takeout, i'm getting really sick of thai and currys... so i'm trying to make as many of the foods i ate when growing up as possible

vegetable beef and barley is something my grandma made

there is another variant which is more broth like that has some weird home made eggish noodle... i wish i knew what it was...

the noodles are called spaetzle, and they're made with egg flour and a bit of water, and you drop them in chunks into boiling water, which is why they're so ugly looking.

aparantly you're supposed to use a thing to press them through before they drop into the water, but i CBF... cause grandma never made them like that

I having bruschetta. i have already made my topping (3 tomatoes, shallots, handful of so of basil, and salt, with lemon olive oil), and all i need to do is get the herb bread out of the freezer (i know lazy mans way of doing it...) and top with mixture and a little parmasen and stick into the grill :)

The lamb was leftover from a bbq on Anzac Day. It was a de-boned leg, that I had marinated in random mix that I made with about twenty dried kashmiri chillies, cumin, lashings of ground black pepper, a dash of honey, a bulb of garlic and some freshly ground walnuts.

I was right, I couldn't be arsed making a salad. Instead, I thought about using the lamb to make a wellington (I've been watching too much Gordon Ramsey!) but decided the shape was too irregular.

So I cooked up some bacon and mushroom and made something that kind of resembled struedel and called it a lamb gumboot.

Made some spaghetti last night. Yum! For some reason, spaghetti always makes more of a mess than fettucuni or sheets, was worth it though - the sauce was delish.

A French restaraunt near my place does beef wellington and they put pate on the meat before wrapping it in pastry. It's fantastic! :D I'm a big fan of yorkshire puddings and beef wellingtons.

Tonight i'm making braised beef with mushrooms and onions. I better get started b/c it has to be in the oven for two hours. Eep.

Made a fantastic rogan josh last night, I think its one of the best ones I have done. I absolutely love making curries, they are my specialty :D They are just so tasty when use all freshly ground whole spices for them and it really helps having somewhere near by that I can get quality meat from.

Tonight Sanura is cooking dinner so I am not too sure what we are having.

I'd have to second this, pop it all in before you go to work, come home to warm house smelling of yumminess - it is especially awesome in winter.

Although, don't cheat and omit the browning of the meat before hand, or you'll feel like you are about to embark on an unappealling looking bowl of bleh with added grey.

It is the only way I have ever found to make chicken soup unappettising.

I had pork chops and salad for dinner tonight. My husband makes the best salads and dressings. Second only to his mother :)

MORUE DE MURRAY - Farmed Murray cod, 7years old, cooked ‘en sous-vide’ with a ginger and spring onion sauce, flavoured with spring onion and crispy chicken skin

LIÈVRE POCHÉ - Poached loin of hare topped with a bay leaf mousse, leg meat and polenta dumplings, bread sauce

Ranger Nic is cooking tonight. I got him a new cook book yesterday so he's making Madrid Chicken. It consists of orange, chicken breasts, tomato based sauce, olives and chorizo (I got from the Spanish Deli). I'll be making some traditional saffron rice to go with it.
