Last night i went out to sails and we had their seafood platter...
Entree - Cold: oysters – natural, bloody mary & wasabi-ginger shots, lime & sea salt cured scallops, bug with chive mayonnaise, marinated salmon with coriander lemon dressing.
Main course - Hot: John Dory fillet with Moreton bay bug salsa, teryaki tuna; paupiette of whiting, crab & ginger, wakame seaweed, sake & mirin broth; Wok fried crab, mussels, prawn & scampi with chilli, ginger, coriander & coconut
Tonight is going to be the start of BBQ season 07/08 so lightly blackened meat and salad
Tommorrow we are having people over for fish and chips so I'm doing tempura scallops, oysters, prawns and vegies, steamed mini dim sims, grilled flake, oven shoe-string fries followed by brownies with fudge sauce and ice cream.

It was... it tasted ok
then I re-added the onions and balsamic (I used caramelized balsamic vinegar)
it just gave it a completely different ad totally awesome taste
although next time I might use a salt reduced chicken stock.
I'm doing a chicken and leek pie tonight. Ah...making, rather...

Boobmeister found this recipe a couple of weeks ago. Don't know if he made it but I did for the the second time now! If you're a risotto fan this is kinda interesting. If you make it, read the comments first too. I used chicken breast cooked off first then made the risotto in the same pan and I didn't use as much stock the second time. Oh and don't use a cheap saucepan if you have a choice, use the good one that spreads the heat evenly. I put some mushrooms just sauteed in a little butter through my mums serve too and she loved that. I don't do mushrooms. For those of you who have kids, my kid loves this too.

My favourite pasta made with olive oil, chilli, garlic, anchovies and a squirt of lemon juice at the end. Yum!
What makes it even tastier is that it is being cooked for me. Only downside is I'm omitting the tumbler full of lambrusco I'd normally have it with.

Pumpkin soup.
peel and cube 1/4 Queensland blue pumpkin and boil until soft.
place soft pumpkin in food processor with blades attachment. add some salt, pepper, dash of curry powder (no more than 1/4 tsp), sprikle of paprika, dash of italian herbs, bit of crushed garlic and ginger, some nutmeg and cinnamon, 1 cup milk, a dollop of fresh cream and 1-2 cups of chicken stock (using the water you boiled the pumpkin in).
blend until smooth. serve hot with crusty bread. serves 2.
total cost: about $5
$3 for the pumpkin, $2 for the cream the rest you should have lying around the kitchen, or make do with less spices.

But it was all incredibly tasty... I had the small 'Chestnut Sang Choy Bow' for my main, and we split several entrees between the 4 of us.

Cooked a porterhouse and had a salad. I've always had steak medium rare. I'm now loving rare. I don't have a bbq but use an electric grill which isn't bad. It was a woolies steak but was really enjoyable.

here is the recipie
ingredients:
6 peaches or nectarines
150g of crumbled amaretti biscuits
1 egg
2 tablespoons of roughly chopped unblanched almonds
2 tablespoons of brown sugar
1 cup fresh orange juice
Preheat oven to 180degrees (celcius).
Stone fruit, then gouge out a little flesh from cavities and chop.
Mix fruit flesh with amaretti crumbs, egg, almonds, and sugar and pile into cavities.
Generously butter an ovenproof dish just large enough to hold fruit neatly.
Arrange fruit in dish and pour over orange juice.
Bake for 30 minutes until fruit is tender but still holding its shape. Server hot, warm or cold with the orange syrup spooned around.

I just polished off a steak with veggies and a cous cous that would probably go really well with Moroccan, it had apple, tomato, sunflower seeds and cumin!

My family visited over the weekend and we cooked a huge leg of lamb on Sunday night. Since we didn't finish it I've chopped up the leftovers, mixed in some thyme and the left over gravy, spooned over some really creamy, garlicy mashed tater and stuck it in the oven. Mmm. Leftovers. For my friend and myself... (her birthday dinner, my shout) We went to the peasants feast in newtown. Total bill was $118.30. She's gluten intolerant so it was the perfect place to go since *every* main was gluten free or had a gluten free option.
Entree:
I had: Duck, Chive and Ginger Crepe for an entree
she had: Prawn Saganaki
Mains:
I had: Bendele Farm Organic duck with four spice Morrocan cabbage stew and baked ginger apple
She had: Roasted Lamb Shank with carrot mash

I had: Chocolate Tart (no fat or sugar made with pure cocoa) with a small scoop of vanilla bean ice cream (which my friend ate the most of)
She had: Banana and date slice and a hot chocolate
The menus were really good for me too... very little carbohydrates available. (which kind of goes in hand with the whole gluten free thing)
I would definitely eat there again.

Instead of just dinner tonight... i've got food until pay day
breakfast is smoked turkey breast with jarlesburg cheese on burgen honey and oat bread
snack/desert: vanilla yoghurt or berries (blackberry, blueberry or strawberry)
lunch is left overs of whatever i've made for dinner
Dinner is either: risotto (roast chicken and caramelised onion) with baby spinach and red onion salad (basalmic vinegar dressing - no oil, just the vinegar)
or roast vegetables (onion, garlic, parsnip, swede, carrot - i've never eaten parsnip or swede before, but i figured they'd work out OK baked right???) and ravioli with a chunky vegetable sauce
i may also chuck stuff into a pot and make soup with the bean mix I bought....

Chicken cooked in Roquefort with sauteed potatoes and beans. Last night we had a dinner party for seven for which we cooked pork belly with fennel and roasted peaches. And bugger me it was good. Melty meat with crunchy crackling...ohsogood. Our guests literally applauded.

With grilled/boiled corn on the cob (i haven't decided yet)

left overs for lunch tomorow :)
Last night I made nachos. I put carrot and onion in the mince... which I seasoned on my own the first time (i normally use an old el paso packet mix)
I froze the rest of the mince for another time. Probably next week :)
I'll try making the salsa myself next time too.
Tomorrrow night I am going to make the stew I was planning on making. Beef, celery, soup mix (beans, peas, barley etc), leek, swede, onion, carrot.
Then Wednesday night I'll be making a beetroot broth (my housemate calls it borscht) and freeze it to have with dumplings.
If anyone has any additions to my ingredients feel free to comment.
No potato or rice or pasta though.

sapia: i suggest pico de gallo for your salsa. is very yummy. My variation on it is 2-3 chopped tomatoes, juice of 1 lime, 1-2cloves of garlic - crushed, coriander (2tblsp), 1tblsp olive oil, dry/fresh chili flakes to taste (optional), cumin to taste(also optional).
put all in bowl and serve. one of my favourite dishes!
also if you are measuring your carb intake - if you have corn keep in mind it has a lot of carby energy - without being an obvious carb. moderate the intake.
last nights dinner was tomato salsa (variation on above) on herb bread, served as bruschetta (yum!) and tonight i have made a huge pot of vegie soup - i know its summer, but its blowing a gale, and its horrible outside, so i felt like something nice and warming. also have garlic bread in the oven :D

Well, not really for dinner tonight, but it's something I made tonight for an upcoming party.
Triple Chili Hotsauce. I originally planned for it to be a sweat/pain/coma inducing hotsauce, but it didn't quite turn out that way. While there's still an intense burst of heat at the start, it cools off to a medium burn and opens up to a stack of different flavours.
I'm stoaked :D

I have a nice rolled pork roast which I've just unrolled, stuffed with rice, prunes and apricots and re-rolled. Potatoes, carrots and peas to round out the Sunday roast.
Rump steak, 2 eggs and some wholemeal toast with uber low fat Philadelphia cream cheese.

Also various amounts of the following:
gluten free Worcestershire sauce, gluten free gravy powder, gluten free beef stock cubes, water... various herbs.
Salt and pepper.

WELL i am making a large eyearound roast with roasted potatos carrots , superb brown gravy , a wonderful bib lettuce salad with tomatos, cukes, green oinions, provalone shredded cheese, and homade italian dressing with desert being a large apple tart topped with velvet vanilla ice cream
my kids love it and well they are not into fast food and hate it they like home cooked meals and i am glad they are big eaters too so i have to cook alot at one time ,,, no left overs in this house ,

Dinner last night was vegetarian curry
Night before was chicken, snow peas, brocoli, water chestnuts, baby corn, and carrot in a sweet and dark soy sauce stir fry (3 serves, I added 1 cup of cooked rice to be split between those serves)
I was a bit grumpy cause I accidentally used my housemates vegetarian fake oyster sauce instead of the normal oyster sauce... but thankfully I didn't notice.

I just bought some awesome spanish smoked, sweet paprika. I mixed it with honey and a couple dashes of Worcester sauce and I have baby pork ribs marinading in it as we speak. It smells divine and I can't wait to eat them.

Smoked paprika is my favourite kind. I use it on practically everything. Its really good with fried rice. Smokey paprika fried rice with ham.... (it was all we had in the cupboard and we had to stretch a meal for 2 to 3 people, so came up with this side dish)

Up date on the roast.....It was farkin lovely even though I kinda over cooked the greens a bit and the potatoes were a tad on the crispy, but the meat was perfect!!!! and the gravy was pretty good too.

Good Gnocchi (http://en.wikipedia.org/wiki/Gnocchi) is delicious but it's got to be made right. Most gnocchi is just potato and flour and it's great for using potatoes that have been sitting in the cupboard too long. Fresher potatoes are no good as they have a higher moisture content. I love gnocchi with vegetarian sauces, pumpkin and sage or just some pesto.
Dinner tonight I'm trying a new recipe. My son sees the golden arches (maccas) and says "nuggets", even at 4.30 am the other morning, so I hunted down a healthy recipe for nuggets. Tonight we're having Crunchy Chicken Fingers and wedges (http://raisingchildren.net.au/articles/recipe_chicken_fingers.html/context/642). Right now I'm off to make Carrot and Muesli Muffins (http://raisingchildren.net.au/articles/recipe_carrot_mini_muffins.html)! When I was shopping this morning I also bought the baking goods to make bread in my slow cooker, but not today, that will have to wait until Friday.
