I went to prague (http://www.prague-restaurant.com.au/) for dinner last night.

I started off with a mug of gluhwein
then had some 'devils toast' which was rye bread tost served with spicy minced meat and melted Edam cheese.. it had pickled chilli and some gherkins on the side

followed by the 'bohemian party platter for one' which contained samples of practically everything they had: smoked pork, roast pork neck, golden young duck, sausage, red cabbage, sauerkraut, potato pancake with bread and potato dumplings

I obviously didn't finish my main. My starter + main + drink only cost around $42, and my main could have easily been shared between 2 people it was that large.

Its one of my favourite resturants in sydney.

How to seriously fuck up food seems to be a uniquely US pastime.

Take a steak pieces, cover in imitation cheese-like stuff and serve it in a roll. Suddenly its cuisine.....
Chicken-fried steak...wtf?
Marinara sauce...that looses all its seafood as it travels across the atlantic...

It's been a while since I've prepared a feast so I've got a Mediterranean style one on the go for tonight. Butterflied leg of lamb that's been marinating since Wednesday in garlic, red wine and oregano... that will get a slow roasting on the barbecue with the hood down, sliced up and served drizzled with tzatziki Some potatoes, par-boiled then tossed in olive oil, salt and rosemary before copping a nice hot oven to crisp them up. Greek salad - lettuce, cucumber, tomato, olives, feta, red onion, and baklava for desert.

Main- Chicken thighs stuffed with pork mince, pistachios and thyme wrapped in bacon sealed in foil then poached, then unwrapped and transferred to frypan to crisp up bacon, served with a sherry vinegar and marsala jus, crispy roast potatoes, carrots and beetroot and steamed greens. Asian style spatchcocked chicken. Cut out the spine and bash the chook flat in a roasting pan on top of some cinnamon quills and star anise. Make a sauce of 1/4 cup water, 1 tablespoon soy sauce, 1/2 teaspoon five spice and 3 teaspoons brown sugar. Simmer the sauce in a small saucepan for about a minute, then brush all over the chicken. Put the chicken in the oven at about 200˚ for about half an hour, then baste it again and crank the oven up to 300˚ for 15 minutes or so.

I have a load of vegies & beans in the house and not much else.

I'm thinking of something simple like a lentil bolognese made with the can of crushed cherry tomatos I bought on a whim.

and a salad with cos lettuce, carrot, cucumber, sun dried tomatos, artichoke, maybe capers? we'll see how it evolves. Maybe with sprouts... I got a 3 pack of snow pea sprouts, mung bean sprouts, and alfalfa sprouts.

no dressing.

Or maybe I'll just have vegies instead of a salad... snow peas, brocolli, carrot... with a bit of soy sauce.

The pheasant was also interesting. I stuffed it with cranberry, onion and thyme and covered the upper side with bacon rashes before roasting it in a pan with some white wine, juniper berries and bay leaves.
Basically it tasted like a stronger flavoured chook, so pretty good but nothing magical.

Pork steaks...though what I'm going to do with them I have no idea. Was going to do lemon and celery seed or something but I have no lemons! Damn it I think I need to go shopping but I'm too busy cleaning.

You can make up a marinade of 2 tblsp light soy, 2 cloves garlic, knob of ginger, 1 tblsp plum sauce, 1tblsp hoi sin sauce and 1 tsp chinese 5-spice. Bake them in the marinade for about 20-25 minutes on 180.

For a quicker version mix 2 tblsp soy, 1 clove garlic, some ginger, palm sugar (or brown sugar) and 1 tblsp sesame oil and brush with the mix before and during BBQ/grilling.

wenches.inc
09-12-2008, 04:24 PM
Cheers royale! I didn't have any hoi sin so I used some sweet chilli sauce and 1 chopped fresh chilli. I will toss together a Chinese cabbage, slivered almonds, ramen noodles, spring onions and another chilli. I'm going to dress it with soy, balsamic ('cos that's all I have) and a dash of oil I think.
