^ the stuffed squid looks good but i think something shat on your steak.
Tonight will be lamb rump steaks with garlic, rosemary and Murray River salt probably with a warm salad of mixed julienne veg lightly sautéed with olive oil, balsamic vinegar and olives.

I made pasta with gorgonzolla sauce last night .. was awesome.
heat 1/3 cup milk, 2 T butter, 1 tsp salt and block gorgonzolla cheese over a low temp, stir and smush cheese until thick and creamy. Take off heat. Put pasta on to cook. When pasta is just cooked drain it. Put cheese sauce back on heat, add 1/4 cup thick cream cook for a few minutes, then toss in pasta and 1/3 cup of grated parmesan cheese.

Inspired by a friend, I just assembled, possibly, the world's tastiest late night/ early morning* chicken burger.
Heres the blue prints:
1 x Burger roll
4 x Ingham honey and sesame chicken breast medallions.
Cheese of your liking
2 x Hash brown
Tomato slices
Lettuce
Tartare sauce (Substituted for Mayo, for that extra zang!)
Chilli + Garlic Sauce
1 x serving of a half arsed insomnia, add to desired amount of sensory distortion
Directions: Combine ingredients.
*This part of the recipe is crucial. I do not think this would taste as good, for example, at lunch time or a sensible dinner hour.

mmm, pretty much anythng thai rocks. I have recently found fresh galangal and tumneric at an asian stall at the south melb market, sooo much better than dried or pickled stuff.

Top recipe Kleph! Woman tried it and instantly asked "Can we swap?". Pretty much sums it up. I deviated a bit from your recipe, I halved it ( no big deal ) but due to a inablity to get "red pepper flakes" I used "chipotle & pepper seasoning" which is basically Chilli flakes, pepper, and chipotle chilli flakes (of which i think there's maybe 5 flakes in the whole jar, but is the closest we can get to chipotle anything here ). Also the local supermarket didn't have any fresh thyme left over so i had to use dried. Oh and I couldn't get Asagio cheese on short notice so i used half tasty and half parmesan.

Diced breast chicken browned with onion/bacon/garlic/cherry tomotos, layered with unpeeled thinly sliced potatos. Topped with a Sweet chilli cream sauce. Baked for 1 hr untill golden brown and served with a side salad.

I made Gorgonzolla chicken and mushroom pasta
brown 250g diced chicken in some butter, throw in 400(ish)g mushrooms ( preferably a couple different types ) and a little bit more butter. fry for 5 minutes or so, then throw in 300ml milk that's had 2 tsp of cornflour mixed in, some chives and chopped sage leaves. bring to the boil then add 50g Gorgonzolla, and 50g parmesan ( change ratio of cheese depending how blue you want it to taste ). turn down to a slow simmer. season to taste.
of course while you were doing this you had salted and vinegared water on to boil, throw in a pack of pasta and cook. drain water keeping a bit. put pasta back into pot with kept water onto hotplate and poor in the sauce, stir around and serve.

Tonight I discovered no meat & not much of anything really in the house, I stir fried some frozen(diced) veggies in some watered down mexican dip, had it with rice that was boiled with some olive oil, tobasco,salt sesame oil & random herbs & spices from the pantry, wasn't too bad.

I presume they're soft tacos? Have you ever thought of making Quesadillas instead? Just put chicken, cheese, onion, mushrooms and anything else into one side, fold over the tortilla and grill. Easy, and fancy-sounding!

I hadn't, but the steak is only 100 grams. It's about an inch thick so I'll cook it, cut it in half, and put it on some toasted bread with lettuce, tomato, cheese, spinach, red onion, mushrooms if any are left, possibly some grilled capsicum and ketchup.
I love (good) steak sandwiches, what can I say? This is not like one from a fish and chip shop (which uses paper-thin steak which is always overcooked).

How to cook a galah, put galah and one rock in pot, boil till the rock is soft, throw away galah and eat rock.

Last night was a seat of the pants casserole. 3 Chicken thighs in smallish pieces, diced thick-cut bacon, 1 onion and garlic sautéed in a bit of ghee (and 2 teaspoons of flour). When chook is well browned deglaze with 1½ cups of red wine, simmer 1-2 minutes then add 1 cup water, 2 teaspoons seeded mustard, mixed herbs, 2 tablespoons tomato paste, 1½ cups chopped mushrooms and 1 bay leaf. Season then simmer for 10-15 minutes (just enough time do the rice or mashed potatoes and steamed vegies to serve it with). Total cooking time = 25 minutes or so.
Tonight is another seat of the pants meal unless I hit the market at lunch time

Given the craptacular weather forecast, I intend on making an Irish Stew this weekend.
The one I made last time was brilliant (lamb, spuds, carrot, turnip, basil, bay leaves; think that was all) but if anyone's got some good recipes they've used in the past that'd be awesome. Doesn't need to be complex, just tasty.
Made Honey Chilli Chicken last night. Again. :p
Plus Deep fried camembert with cranberry sauce as an entree. *drools*

Ed and I were supposed to have farewell drinks with a work guy tonight at a place that makes the best fried olives I ever tasted.
The fuckers want to go to a shitty pub instead....but the olive bar is on the way home so hopefully this will be part of my dinner. Then probably pizza :P

It didn't come out of the pan it one piece but it tasted great, I didn't follow recipe exactly, I didn't have an egg & I added salt & herbs to the batter, I lined the pan with olive oil & Sesame oil.

Mmm, My Dad was born in England, and when I was 13 we went there & my grandma made her own Yorkshire Puds *drools* Sooo nice as a side dish to a good ol' roast & onion gravy.

so there i was, ambling down the street here in miraflores last night, minding my own business and LO! out of the twilight i saw it... D'Cocina (http://www.d-cocina.net/).
now i love living in peru for the food but it has been frustrating finding a few necessities i depend on in my stateside kitchen. one is a decent solinger steel knife and the other is a cast iron pot. i have found the former here at least but way overpriced.
well this shop had both and at a decent cost. they are a big enough store to have both the top-of-the-line equipment as well as the bargain line stuff. the latter priced pretty much correctly. very often, when it comes to knives, i prefer the ones in the lower price range - they aren't as heavy and, for some reason, have a decent angle to the edge of the knife.
anyway, i purchased both (although it took an act of will not to pick up the cuisinart food processor) and, ladies and gentlemen, it is time to cook.
the weather is cold and humid, like lima is in the winter. so it is time to slap the anthology of american folk music (http://www.kleph.com/stuff/2006/04/anthology-of-american-folk-music.html) on the ipod and get down to preparing a gen-you-wine cajun gumbo (http://www.kleph.com/cook/2006/01/grandmother-schexnayders-gumbo.html)!

I do two to versions, one is similar to that one (- the beans, chook stock, peppers, + red wine, carrots, bay leaves, beef stock)
and the other is asian flavoured with soy sauce, oyster sauce, hoi sin, chinese five spice, sechwan pepper and stuff.

Yeah you guys get lucky with pork (ours is as cheap, but generally lower quality and less popular so we dont end up with as much speciality stuff), and your chicken tends to be a lot cheaper (although ours tastes better). Beef we are about on a par, lamb...we are the kings.
I am surprised you dont get more lamb in peru though, is goat an option?

goat it very common in rural areas in the north of peru, particularly in the region of lambayeque where i lived for a few months. one of my favorite dishes from there is "seco de cabrito" or goat stew. it is typically a joint of the goat cooked to fall-off-the-bone tenderness served over beans and rice. it is astonishingly flavorful.
as for the pork, yeah, i got it. but i don't have an oven or my barbecue grill. the latter might have to change if i am around here next summer.

Yesterday I managed to hunt down some sechuan(sp?) peppers, so I celebrated by making a sechuan chicken stirfry in a chinese cookbook that I've been meaning to make in ages. It tasted brilliant, the peppers have a really unique taste, they're not the traditional hot pepper taste, I'd liken them more to a clove taste.
It wasn't the really spicy (chilli) taste that you get when you order sechuan from chinese, they obviously add a lot of chilli to it ( which I think is also part of the sechuan cuisine ). My next step is to find some "hot bean paste" like Iron Chef Chen Kenichi ( the sechuan sage ) uses in all his dishes.

Rather than say whats for dinner tonight, I'll list out what I'm planning for my menu this week. It will also serve useful to me if i need to refer back to this post :D
- French apricot chicken on a base of coloured aldente fettuccine, served together with juicy corn on the cob.
- Mexican burritos in soft garlic tortilla wraps with a generous serve of assorted garden salad.
- Sizziling Beef and zucchinni in ginger and lemongrass stirfy, served on plump hokkien noodles.
- Spicy chicken marinated strips, with sliced black olives, purple spanish onions on a zesty bow-tie pasta bed.
- Succulent chunky beef satay with green capsicum and onions combined with steamed long grain rice.
