On saturday myself and two mates went fishing near the mouth of the brisbane river. We caught a fair bit, but only one fish was worth keeping and eating. A superb flathead.
Forward 3 days to tuesday lunch at work and we cook him up on the BBQ at work.
We mixed flour with tarragon and wet the flathead fillets with lemon juice before covering with the flour. This went onto the bbq.
A stirfry was made of red onion, mushrooms, green capsicum, sweet red chillis and 2 garlic cloves. I added a splash of thai salad dressing to it, and this also went on the BBQ.
We also flame grilled slices of aubergine and zuchini.
Flash back 15 minutes I put 2 whole potatoes in the microwave for 15 minutes and 2 garlic cloves. I then cut the top off the potatoes, scooped out the potato flesh and mashed it with the garlic, salt, pepper and some milk. This mash went back into the potatoes and were baked (for the 10 minutes we were cooking on the bbq) in one of those fancy convection oven/microwaves.
needless to say there was much jealousy in the office as we sat down to eat.
