brown an onion with a handful of chopped rosemary and a couple cloves of garlic, when browned add 500g or so of premium mince ( the sort that doesn't have a liter of fat at the bottom when cooked ) brown this then throw in a dash of red wine, 2 tablespoons of tomato paste and a handful of finely chopped pepperoni. cook for a while, then add a glass of red wine and a handful of chopped mushrooms and cook the alcohol out, then add a can of tomatoes, and a handful of sundried tomatoes chopped.
cover and leave on a low heat. while you've been doing this you'll have roasted a red capsicum, put it in a plastic bag until handleable and peel off the skin, chop and add to the pot.
put pot into oven ( if not ovenproof put in oven-dish and cover ) @ 180 degrees for 2 hours.
when done stir through a handful of fresh basil leaves and serve with curly spaghetti and fresh parmesan cheese.
