The plethora of Criterion Hotels in Australia goes back to the successful 19th-century caterers Spiers and Pond, creators of Melbourne's Shakespeare Grill Room (1851) and Cafe de Paris. Their crowning achievement was London's Criterion Theatre and Criterion Restaurant (both 1874). The lavish interior design of these was along neo-Byzantine and Arabian lines, hence the name "The Criterion", being the English translation of the title of chapter 25 of the Koran, "Al Furqan". Most Australian Criterions (or should that be Criteria?) are named after these. Incidentally, in 1861 Spiers and Pond also brought the first All-England cricket team to Australia on the SS Great Britain. Tony Baldwin, Sauve, France.
