I've never been one to use recipes ("yeah, fuckit, chuck in some red wine and vegemite") but this is diverse enough that you can use it to grab ideas on a particular ingredient or food group and twist them any way you like. Actually vegemite is one of the more useful ingredients I use. It helps flavour soups and stews. I meant my cooking process is less method, more feel and knowledge of what goes with what. But even I make use of this book, despite the :fag: cover

Sounds like you're making a doro-dango (http://web-japan.org/trends01/article/011005sci_r.html).

I often use roux, but I use butter and I don't make it dark. I also only use it when I want to seriously thicken something (like a white sauce), rather than just boosting the flavour.
