If it is only for POP3 then Thunderbird will do.

mail.app ain't that bad either, but if (for whatever reason) you don't like it, then thunderbird is good

I've never had issues with mail
however if you want your mail client to hook into exchange, good luck.

There are a few others, but they're expensive.

There is also a freeware client called Evolution for Linux that I think may have a Mac OS X port. Evolution has Exchange support under Linux but I am not sure about the OS X. Just food for thought.
Update: Also, Ximian has Exchange connectors. And Evolution is now owned by Novell

thunderbird?
How do I use it?
I created two accounts hotmail and gmail but it was like "Failed to connect to server pop.hotmail.com." "connect to server pop.gmail.com timed out" :(

There's an extension called WebMail (http://webmail.mozdev.org/) which, in conjunction with the appropriate module extensions, will let you access all the major web-based email services.
Once you've installed it, it's all pretty easy to set up. Here's a screenshot of my server settings for one of my accounts to give you an idea of what settings you need:

I set the port higher than default because the default caused me troubles. Just make sure you have that port forwarded or even that fix won't work. Setting up your webmail acocunt in Thunderbird is easy. Just remember to put the full name of the account (including the @hotmail.com bit) when you set it up and (if I recall correctly - you may want to check this) use localhost as your incoming server.

Actually Mail can connect to Exchange but the Exchange server must have Outlook WebAccess turned on to do it.
I'm not sure how to get it to work though as it still keeps failing for me.
I believe Evolution can be installed if you have Fink installed but I'm not sure what version that is.
